Take a butchers at Grantown star – he's at the world championships in the US
The World Butchers' Challenge is under way in Sacramento and there at the cutting edge of TeamGB is Grantown's own Barry Green.
Teams of butchers from all over the world are gathering to showcase their skills in preparing and presenting a range of meat products.
Mr Green, who runs Cairngorm Butchers on the High Street, is sharpening his knives for the big competition. The team will have three hours to get creative with beef, pork, lamb and chicken in their attempt to win the international title.
It’s the first time on the top stage for the Strathspey ace, who has previously won titles at Scottish level.
He is one of only two Scots to make the team which is known as the British Beefeaters and draws talent from nationwide.
The competition is being held in California until Sunday, with15 teams challenged to get creative with a range of different meats in their attempt to win the international title.
“We have three hours to cut and prepare beef, chicken, lamb and pork. Then we’ve got to display it in an attractive way," Barry told the Strathy earlier this year on his selection.
“It’s held in a big American stadium and it’s an intense competition. But it’s a great way to test your skills.
“I never thought I’d end up doing this when I first got my shop.”
The challenge involves the teams using their own seasonings, spices and marinades to create their final products. They will be judged on a range of criteria, including technique, workmanship, innovation and overall finish.
Cairngorm Butchers is known for its innovative products, and has caused a stir recently with sausages using cookie butter.
The recipe, created by employee Katie Hay, uses Lotus Biscoff biscuits and spread to create its distinctive flavour.
Mr Green said that customers have been divided about the caramel and cinnamon flavours but each batch has sold out quickly.
He said: “We like trying new flavours and I’m happy for the team to try anything. Sometimes it works, sometimes it doesn’t.”
